Industries : Specialty Foods The specialty foods industry is a dynamic, rapidly expanding sector of the $1.4 trillion food industry. Historically, the U.S. specialty food industry has grown at an annual rate of 20%, reaching nearly $63.0 billion in retail and foodservice sales in 2008. Specialty foods are broadly defined as any food or beverage commanding a premium due to its quality, availability, convenience or target consumer.
